However, temperature and cooking time can affect the outcome. I love to slow cook it at 350 degrees fahrenheit for a tender meat. Next question is this. It takes 3 hours to cook 3 lbs of chuck roast in the oven at 350 degrees. Roasts taste better when they are cooked slowly. Size is going to play a role in how long it takes. You can find roasts in all sizes, but regardless of the size, they should be cooked until they are at least 145 degrees Fahrenheit. This will give you a medium-rare roast. You can cook all the way up to 170 degrees Fahrenheit for a well-done roast. When cooking meat, it helps to have a good meat thermometer.
If you are short on time, you can go for high temperatures such as 375 or 400 degrees. At 400 degrees, it takes about 1 hour to cook chuck pot roast. However, at such high temperatures, the chuck roast will dry out and the meat will be tough. So, I don’t recommend cooking at this higher temperatures.
I am picky about this. It is really best to cook the meat at 350 degrees. The idea of pot roasting the chuck meat is to get a tender meat that will dissolves in your mouth. To do so, you really have to cook it long enough at low temperatures for the connective tissues in the meat to completely break down. If you have time, try going for lower temperature at 300 degrees. This takes about 4 hours to cook the chuck pot roast in the oven.
The beautiful thing about Chuck Roast is that you can combine a lot of different ingredients to make it taste great. The one thing that goes well with the roast is vegetables. You can go with an autumn theme and include things like butternut squash, brussel sprouts, and radishes. Or a meal better suited for the summer with green beans. Regardless, of what you choose, you’ll be able to create a great meal with minimal preparation.

In a situation where you simply do not have enough time to cook the meat thoroughly, you can cheat by using the microwave. Before you put the Chuck Roast in the oven, put it in the microwave and give it a head-start. Set the microwave at 50% power and cook the Chuck Roast for 5-10 minutes. Adjust your time up or down based on the size of the roast. After you have this “pre-heat” period, put it in the oven and cook it normally.
You can also do the microwave trick after you have cooked it in the oven. If your guests are waiting for the food and it simply is not done, you can take it out of the oven and cook for 2-3 minutes in the microwave. If you are going to serve the meat already sliced, you can take it out of the oven and slice up the individual portions. Put it back in and let it cook for a few more minutes. Pay careful attention here! You can easily overcook it when it is sliced into small pieces.
You can make your Chuck Roast extra special by making a gravy to go with it. When you take the roast out of the oven, remove it from the pan and set aside. Remember that it will continue to cook for a few more minutes after you take it out of the oven.
Take the juices from the roast and vegetables and put them in a small pan on your stove-top. Add two tablespoons of corn-starch and a little bit of water. Keep whisking the gravy until it is smooth. Need it to be thicker? Add some flour (Wondra works well to eliminate clumps). Need it to be thinner? Add a little more water. Keep whisking until it meets your satisfaction.
At 400 degrees, it takes about 1 hour to cook 3 pounds of chuck pot roast. However, at such high temperatures, the chuck roast will dry out and the meat will be tough. So, I don’t recommend cooking at this higher temperatures.
This takes about 4 hours to cook the chuck roast in oven at 300 degrees. This slow cooking will break down the connective tissues inside the meat and produces a delicate and tender meat that melts in your mouth.
It takes about 1.5 hours to cook the chuck roast at 375 degrees in the oven.
It takes about 20 minutes to cook chuck roast in the oven per pound at 400 degrees.
2 lbs of chuck roast will take about 40 minutes to cook in the oven at 400 degrees.
3 lbs of chuck roast will take about 1 hour to cook in the oven at 400 degrees.
