There are many recipes for roasting turkey breast. However, I love to use one easy turkey breast recipe. Here’s how to cook turkey breast in the oven.
Pat dry the turkey breast with paper towels. If you toss it into the oven wet, it will cook unevenly and fail to become crispy.
Turkey breast goes well with a mixture of butter, garlic, ginger, rosemary, salt and pepper. Stir the ingredients together and rub the turkey with the creamy and aromatic mixture. Apply it under the skin as well to make sure the meat absorbs the flavors.
For the flavors to fully penetrate the turkey breasts, put the turkey breast with the marinade in a zip lock bag and place in the freezer overnight. Remove from the fridge a few hours before baking for it to defrost properly. Otherwise, it will lead to uneven cooking of the turkey breasts.
Arrange the marinated turkey breast in the center of a wire rack placed on a baking sheet. The rack will allow the heat to circulate under the turkey breasts, cooking it evenly. Also, the turkey’s fat and juices will drip down on the baking sheet, ensuring the breast doesn’t bake in its own drippings, which can prevent the golden crust forming.
Bake the turkey breasts at 350 degrees for 20 minutes per pound. Braise halfway through with the drippings accumulated on the baking sheet to prevent the breast from over drying. When baking is done, remove it from oven and let it rest for 10 minutes before slicing and serving.
You can speed up the process by using either the convection or the broiler. Broiler uses extreme temperatures to create a brown crust on meat roasts in no time. Use this method only if you like a crispy turkey breast. If you prefer a moist and plain skin, do not broil the turkey breasts. Use the convection fan instead. It accelerates the circulation of heat throughout the oven, making the breast cook through faster.
A great idea for improving the turkey breast is to make a gravy from its own drippings. Transfer the drippings from the baking sheet to a sauce pan. Add butter and melt over a low heat. Stir in the flour until you get a thick paste. Add fresh herbs, salt and pepper, and increase the heat to medium. When the paste starts to bubble, remove it from the stovetop and serve next to the turkey.
Moreover, there are many side dishes that pair well with turkey breast. You can’t go wrong with creamy mashed potatoes, mac and cheese, brussels sprouts with bacon, and green beans with garlic and parmesan. Squash is also a wonderful company for turkey. Some delicious dishes from this super veggie you can try include roasted acorn squash with maple syrup, squash soup, and stuffed acorn squash with a delicious filling consisting of mushrooms, walnuts and rosemary.
It takes 25 minutes to cook a turkey breast per pound in the oven at 325 degrees. This means a 7 lb turkey breast will take almost 3 hours to get cooked. And a 8 pound turkey breast will take 3 hours and 20 minutes to be fully cooked. This temperature gives you a turkey breast roast with moist smooth exterior without any crisp. And the meat inside is very juicy and fall apart tender.
I normally prepare 0.5 pound of turkey breasts per person in a serving. This is for turkey breast without bone. However, if you are using turkey breasts with bone-in, it could be about 1 pound per person.
The internal temperature for turkey breast will be at 165 degrees Fahrenheit when done. Note that this internal temp should be taken at the thickest part of the turkey breast as thicker meat will take longer to cook.
